I made a really tasty easy meal earlier this week and had the leftovers for my lunch. Helps me save a little money during the week to make a light meal for dinner when I have the time, and pack the rest for lunch for a day or two. That way if I end up wanting to go out to dinner at some point, it's no big deal and I'm not wasting any food.
A woman I met in the pasta aisle turned me on to Healthy Choice wheat pasta, which is really good. I put some store bought pesto sauce on the pasta. My salad is bagged lettuce, sun dried tomatoes, a few olives, and Parmesan cheese. Olive oil and balsamic vinegar, mixed with salt and pepper are an easy dressing.
